Wild Salmon Cakes – Eat With Your Eyes

Ingredients: 1 pound wild salmon fillet, boneless and skinless, minced,1/4 red onion, diced,1 teaspoon capers,1 egg,1/2 cup panko
Instructions:

  1. Mince the salmon.
  2. In a bowl, whip the egg; add the diced onion, capers and salmon until ingredients are incorporated
  3. Add the panko bread crumbs until combined.
  4. Form into 4 patties and place on a hot grill for about 2-3 minutes on each side, or in a 350 degree oven for 15-20 minutes.
