Love my wholesome after dinner snacks without sugar. I found this recipe on 12tomatoes.com and had to try it. We all know how I’m obsessed with minimal ingredient recipes and tasty snacks with no added sugar and wholesome ingrdients. This was a gold mine, not overly sweet since its only the banana working its magic in this recipe. But the two flavors come out in this cookie. Its amazing. But if you’re looking for a dessert, add some sweetener to the mix, maybe you can experiment with 2 tbs coconut sugar. I made 15 very small bite size cookies. And usually pop two at a time. There are add ins I included below. I only used the vanilla extract this round and it was perfect.
Ingredients:
- 1 ripe banana
- 3/4 cup shredded unsweetened coconut
Possible Ad Ins:
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- mini chocolate chips
Directions:
Preheat oven to 350F. Line a cookie sheet with parchment paper.
In a food processor, pulse the banana and shredded coconut until combined. Using a cookie scoop, transfer balls to cookie scoop. Flatten slightly with the back of the spoon. Bake for 15 minutes or until edges start to turn golden brown.
Yields 15 mini cookies.
