- 1 cup brown or white rice
- 2 cups water
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 1/4 cup black olives, sliced
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
- Place the rice and water in a pot and bring to a boil.
- Reduce the heat, cover and simmer for about 20 minutes or until the rice is tender and the water has been absorbed.
- In a separate pan, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until tender and fragrant, about 5 minutes.
- Add the tomato paste, olives, sun-dried tomatoes, oregano, thyme, salt and pepper. Stir to combine.
- Simmer for another 5 minutes or until heated through.
- Serve the rice topped with the tomato and olive mixture.
