Broiled Pineapple

Editor’s Note: A light fruit dessert is the perfect way to end just about any meal. And if you’re looking for easy desserts, then this Broiled Pineapple recipe couldn’t be any easier! Using just three ingredients, this sweet broiled pineapple recipe can be ready to eat within minutes. Although you can serve it as a delightful dessert after a filling lunch or dinner, consider topping it with plain or vanilla yogurt and serving it for a sweet addition to your brunch menu. - 1 ripe fresh pineapple
- 1/4 cup firmly packed light brown sugar
- 1/2 teaspoon ground cinnamon

Peel the pineapple and slice crosswise into 6 rounds. Remove the core from each slice with a 1-inch cookie cutter.
In a small bowl, combine the brown sugar and cinnamon. Arrange the pineapple slices on a broiler pan. Sprinkle with half the sugar mixture.
Broil 4 inches from the heat source until golden brown on the edges, 3 or 4 minutes.
Turn the pineapple slices; sprinkle with the remaining sugar mixture and broil until brown on the remaining side, 2 to 3 minutes.
Variations
* Top with vanilla frozen yogurt or ice cream.
* Substitute maple sugar or crumbled maple-sugar candies for the brown sugar.
