Ingredients:
- 2 cups rolled oats
- 1/2 cup raw almonds, chopped
- 1/2 cup raw pecans, chopped
- 1/2 cup shredded unsweetened coconut
- 1/4 cup coconut oil
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1/4 cup mini chocolate chips, optional
Instructions:
- Preheat the oven to 350°F. Line a 8×8 inch pan with parchment paper.
- In a large bowl, mix together the oats, almonds, pecans, and coconut.
- In a small saucepan, heat the coconut oil, honey, vanilla extract, and sea salt over low heat. Stir until everything is melted and combined.
- Pour the wet ingredients over the dry ingredients. Mix until everything is well combined and coated.
- Press the mixture firmly into the prepared pan. Use the back of a spoon or a spatula to ensure it’s evenly spread and pressed down.
- Bake for 20-25 minutes, or until golden brown on top.
- Remove from the oven and let cool completely in the pan before slicing into bars.
- Optional: sprinkle mini chocolate chips on top of the bars while they’re still warm from the oven to melt them slightly.
