Ingredients
- 1 pound lamb shoulder, cut into cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups cooked brown rice
- 1 cup Greek yogurt
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1 lemon, cut into wedges
Directions
- Preheat the oven to 350°F.
- In a large skillet, heat the olive oil over medium-high heat. Add the lamb and cook until browned on all sides, about 8 minutes.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the diced tomatoes, chicken broth, oregano, thyme, paprika, cinnamon, cayenne pepper, salt, and pepper. Stir well and bring to a simmer.
- Transfer the mixture to a baking dish and bake for 45 minutes.
- In a small bowl, mix the Greek yogurt, parsley, mint, and a squeeze of lemon juice.
- Serve the lamb stew over brown rice, topped with the yogurt sauce and lemon wedges.
