Roasting is a simple and super tasty way to enjoy some broccoli!

One of my favourite ways to cook veggies is to roast them! You simply cut them up into bite sized pieces, toss them in a bit of oil and roast them in the oven at a high temperature. By the time they are tender the bottoms have turned a light golden brown and that caramelization intensifies their flavour! Roast broccoli is one of my go-to side dishes because it’s so simple, easy and oh so good! This side is as easy to make as tossing the broccoli with oil, along with optional seasonings, and roasting! It only takes about 20 minutes to roast so it’s done by the time your main is ready. I always enjoy simple roast broccoli but it’s so easy to add flavour to it! I sometimes like to sprinkle on parmesan cheese for the last few minutes of roasting and pretty mush any kind of cheese works. Another great option is to mix honey and sriracha into the oil before roasting for a sweet and spicy version! If you are looking for a quick, easy and tasty side, then this roast broccoli is definitely one to keep in mind!

Roasting is a simple and super tasty way to enjoy some broccoli!

ingredients
  • 2 heads broccoli, sliced
  • 2 tablespoons oil
  • 2 cloves garlic, minced or grated or chopped
  • salt and pepper to taste
  • 1 pinch red pepper flakes (optional)
directions
  1. Toss the broccoli in the mixture of oil, garlic, salt, pepper and red pepper flakes and place in a single layer on a baking sheet/pan.
  2. Roast in a preheated 425F/220C oven until golden brown, about 8-10 minutes per side.

Option: Add 2 tablespoons honey (or maple syrup) and 2 tablespoons sriracha to the oil mixture for a sweet and spicy roast broccoli!
Option: After roasting sprinkle on some grated/shredded cheese such as: parmesan, grana padano, pecorino romano, asiago, etc.
Option: Add nutritional yeast to the oil mixture.
Option: Hit the roast broccoli with a splash of lemon juice!.
Option: Add some nuts like sliced almonds for the last 5 minutes of toasting!
