- Preheat oven to 400F
- Chop a 2 heads of broccoli into florets and set aside.
- In a large bowl, whisk together the oil, sweet chili sauce, sriracha (optional), and lime juice.
- Add your broccoli in in batches, coating completely in the sauce, and then transfer to a baking sheet and lie in a single layer.
- Season generously with salt and pepper to taste. (for extra kick, add some red pepper flakes!)
- Sprinkle with shredded pepper jack cheese.
