Strawberries and Cream Cake – Eat With Your Eyes

Ingredients: 2 1/4 teaspoon baking powder,1/4 cup cold butter, preferably cut into cubes and chilled before use,2 eggs plus 2 egg yolks,2 cup flour,1/2 cup heavy cream,¾ tsp salt,1 quart Fresh strawberries, washed and dried(do not remove stem),¼ cup sugar,1 t pure vanilla extract,1 cup whole milk
Instructions:

  1. !For Cake:Preheat oven to 350 F (176 C). Grease a 9×2 cake pan (8-inch round is just fine) with cooking spray or butter.
  2. Add a little bit of flour (about cup) to the pan, move it all around, and tap off all the excess.In a large bowl, add butter and cup sugar and beat with mixer until soft and creamy.
  3. Add eggs, milk, and vanilla. Beat well.
  4. Add flour, baking powder, and salt; and give this powder mixture a little mix with a spoon and then beat with mixer on low until just combined.Dont overbeat in this step.
  5. Bake until a fork poked inside comes out clean (~25 min).
