If there’s anything we love as much as we love football season, it’s a fun and yummy breakfast board! And this Tailgate Breakfast Board definitely makes the cut! Balanced, nutritious, and so darn cute, this is a breakfast your football-loving family will ask for again and again. A little prep work in advance makes it an easy win, too. For this board, I used Birch Benders mixes and frozen waffles to keep it super quick and easy! Along with some delicious baked bacon, this super cute board includes:

Such an awesome line-up of deliciousness that’s meant to be grazed on throughout the game! All of the eats and treats on this board are just as enjoyable at room temperature so no need to worry about everything staying warm. Treat it more like a snack board and expect your team to graze on it throughout one half of the game, if it lasts that long. The beauty of using Birch Benders products is that their pancakes and waffles are seasoned so well that you don’t need butter and/or syrup to enjoy them.

Dark Chocolate Covered Strawberry Footballs

First, wash and dry the strawberries very well. Then, in a small bowl, microwave the dark chocolate in 30 seconds intervals, removing and stirring at each 30 second interval, until the chocolate has melted.

Holding a strawberry by the stem, dip it into the melted chocolate, lift and twist slightly, letting the excess chocolate fall back into the bowl and then place the strawberry on a parchment-lined work surface to let the chocolate set. Repeat with the remaining strawberries. Once chocolate is set on the strawberries, place vanilla frosting in a resealable baggie and snip a small piece off of one corner. Pipe the frosting onto the top of each chocolate covered strawberry to create the football lines.

Mini Blueberry Pancake Muffins

Start by preheating the oven to 350°F. Then lightly grease a 24-cup mini muffin pan with nonstick cooking spray and set aside. Next, in a large mixing bowl, whisk together the pancake mix, milk, lightly beaten eggs, and maple syrup until well combined. Then fold in the fresh blueberries.

Divide the batter evenly among the prepared mini muffin cups, filling each one almost full. Bake for 16-18 minutes or until a toothpick inserted in the center of the muffins comes out clean and they start to turn golden brown on top. Let muffins set in the pan for 10 minutes before running a knife around each muffin to release it from the pan.

Football Shaped Pumpkin Pancakes

In a large mixing bowl, whisk together the pancake mix and 3 ½ cups water until just combined. Then preheat a large griddle or skillet to medium-high heat. Grease with nonstick cooking spray or cooking oil.

Next, using a ¼ cup measuring cup, pour the batter onto the hot skillet and let cook until bubbles begin to form, about 1-2 minutes. Quickly flip and let cook for another minute until cooked all the way through and golden. Repeat with remaining batter to make about 24 pancakes.

Cut pancakes into football shapes with a football-shaped cookie cutter. Keep them warming in a 200°F oven until ready to decorate them with frosting and add to the spread table.

When ready to serve, place vanilla frosting in a resealable baggie and snip a small piece off of one corner. Pipe the frosting onto the top of each football-shaped pancake to create the football lines.

Mini Chocolate Chip Pancake and Strawberry Skewers

Start by whisking together the pancake mix and 2 cups water in a large mixing bowl until just combined. Then preheat a large griddle or skillet to medium-high heat. Grease with nonstick cooking spray or cooking oil.

Using a 1 teaspoon measuring spoon, scoop small amounts of batter onto the hot skillet and let cook until bubbles begin to form, about 30-60 seconds. Quickly flip and let cook for another 30-60 seconds until cooked all the way through and golden. Repeat with remaining batter to make about 100 mini pancakes.

Keep pancakes warming in a 200°F oven until ready to skewer with the strawberries. When ready to serve, slice each strawberry into 3 thick slices. Alternate adding 3 strawberry slices and 3 mini pancakes onto each bamboo knotted food skewer. Serve with maple syrup for drizzling and dipping.

Turkey Sausage and Egg Waffle Sliders

First scramble the eggs. Then warm the turkey sausage patties according to package directions and toast the waffles according to package directions until golden brown. Then cut each waffle into 4 wedges. Place one wedge down and top it with a sausage patty and then a spoonful of scrambled eggs. Top the eggs with another waffle wedge to create the slider.

Place a jumbo blueberry on top and secure everything together with a football flag cocktail pick.

Football-Shaped Peanut Butter Waffles

Toast waffles according to package directions. Then cut each waffle into a football-shape with a football-shaped cookie cutter. Next, spread each football-shaped waffle with a thin layer of peanut butter. Place vanilla frosting in a resealable baggie and snip a small piece off of one corner. Pipe the frosting onto the top of each football-shaped pancake to create the football lines.

How to Build the Tailgate Breakfast Board

Start by making the Dark Chocolate Covered Strawberries. Store in the refrigerator until ready to add them to the board. These can be made a day in advance to save prep time in the morning. Next, bake the Mini Blueberry Pancake Muffins. These can also be baked a day in advance and stored in an airtight container at room temperature until ready to add them to the board.

Bake the bacon. While it’s in the oven, cook the pumpkin pancakes and mini chocolate chip pancakes. Scramble the eggs and heat the turkey sausage patties. Keep everything warming in a 200°F oven until ready to assemble the board. If you make the pancakes a day in advance, reheat them in a warm oven, microwave or toaster.

Build the board by first adding a bowl of strawberries and blueberries to the center of a 18″ by 12″ wood board. Next, place two small jars of maple syrup above and below the fruit bowl. Then add the Dark Chocolate Covered Strawberry Footballs to the bottom left corner of the board.

Place the Mini Blueberry Pancake Muffins to the top center of the board. Cut the pumpkin pancakes into football shapes and decorate lines on them with frosting. Add them to the left of the fruit bowl on the board and place a few at the bottom center of the board.

Prepare the Football-Shaped Peanut Butter Waffles and decorate lines on them with frosting to finish the football look. Add them to the right of the fruit bowl on the board.

Assemble the Mini Chocolate Chip Pancake and Strawberry Skewers and add them to the top left corner of the board. Then put together the Turkey Sausage and Egg Waffle Sliders and add them to the bottom right corner of the board. Finally, pile the baked bacon in the top right corner of the board.

Serve the board and enjoy! May the best team win!

Instructions

  • Start by making the Dark Chocolate Covered Strawberries. Store in the refrigerator until ready to add them to the board. These can be made a day in advance.

  • 1 package Birch Benders Blueberry Pancake Mix (or similar)

  • ½ cup fresh blueberries

  • 1 cup dark chocolate chips
  • 10 whole strawberries
  • Vanilla Frosting

Instructions

  1. Wash and dry the strawberries very well.
