Vegan Spinach and Feta Triangles


  • 1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
  • 1 cup crumbled vegan feta cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 12 sheets phyllo dough, thawed
  • 1/2 cup vegan margarine, melted


1Preheat your oven to 350°F.
2In a large mixing bowl, combine the spinach, vegan feta cheese, garlic, salt, black pepper, and nutmeg. Mix well.
3Lay out one sheet of phyllo dough and brush it with some melted vegan margarine. Top it with another sheet of phyllo dough and brush it with more margarine. Repeat until you have six layers of phyllo dough.
4Cut the phyllo dough into six squares. Place a tablespoonful of the spinach mixture in the center of each square.
5Fold each square diagonally to form a triangle. Brush each triangle with more melted vegan margarine.
6Place the triangles on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the triangles are golden and crispy.
