Ingredients
- 1 block of firm tofu, drained and pressed
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced

- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1/4 cup vegan yogurt
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon zest
- Salt and pepper, to taste

Instructions
- Cut tofu into cubes and place in a large bowl.
- In a separate bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper until well-combined.
- Pour the marinade over the tofu and toss to coat. Let sit for at least 30 minutes, or up to 4 hours in the fridge.
