What ingredients make up a traditional Greek lunch?


  • 1 pound boneless, skinless chicken breasts, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 red onion, chopped
  • 1/2 cup kalamata olives
  • 1 cup cherry tomatoes, halved
  • 4 ounces feta cheese, crumbled
  • 1/4 cup chopped fresh parsley


  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together garlic powder, dried oregano, dried basil, onion powder, salt, and black pepper.
  3. Season sliced chicken with the spice mixture.
  4. In a large skillet over medium-high heat, heat olive oil. Add chicken and cook until browned on both sides, about 5 minutes per side.
  5. Transfer chicken to a large baking dish
  6. In the same skillet over medium heat, add red bell pepper, yellow bell pepper, and red onion. Cook until softened, about 5 minutes.
  7. Add kalamata olives and cherry tomatoes to the skillet and stir to combine.
  8. Pour the pepper and olive mixture over the chicken in the baking dish.
  9. Sprinkle the crumbled feta cheese over the top of the chicken and vegetables.
  10. Bake in the preheated oven for 20 to 25 minutes or until the chicken is cooked through and the cheese is golden brown.
  11. Sprinkle chopped parsley over the top before serving.
