A BEAUTIFUL AND BOOZY CHRISTMAS DRINK

A Christmas drink should not only taste magical, but it should also look magical, don’t you think? Well, if I do say so myself, this holiday cocktail fits the bill in both ways.

Prosecco, a delightful sparkling Italian wine similar to champagne, forms the light and fruity base; A splash of Chambord, which is a sweet red liqueur made with fruit and brandy, adds beautiful color and complexity of flavor. Finally, tart green apples, bright cranberries and exotic pomegranate add the perfect touch.

RECIPE INGREDIENTS

These ingredients are typically very easy to find and prepare, but if you need to make any substitutions, that’s totally fine! The recipe is very flexible.

  • Apples: You’ll need two fresh, firm Granny Smith (or other green) apples; washed, cored and diced.
  • Cranberries: Widely available, fresh cranberries add a wonderfully festive color. You could also use fresh tangerines, washed and cut into small wedges.
  • Pomegranate Seeds: You can remove the seeds (also called arils) from one pomegranate, or buy a container of ready-to-eat pomegranate seeds.
  • Prosecco: You’ll need one bottle (750 ml) of your favorite Prosecco. You can also use a good champagne here, if you’d like! Double up on the booze if you have to, either for a party, or for just the two of you. ?
  • Chambord: Add a splash of Chambord (or any other red-colored liqueur) to each glass for color, or omit if you wish.
  • Rosemary Sprigs: For garnish.

HOW TO MAKE THESE HOLIDAY COCKTAILS

As with a regular mimosa, this is a simple recipe that you can make in a pitcher or punch bowl, and serve accordingly. I like to serve it in pretty champagne coupe glasses.

  1. Place Fruit in Pitcher: In a punch bowl or pitcher, combine the prepared apples, cranberries, and pomegranate seeds.
  2. Add Sparkling Wine: Pour in the Prosecco and stir gently. For a non-alcoholic version, you can use white sparkling grape juice.
  3. Serve: Pour the mimosas into glasses, adding a splash of Chambord to each glass, if desired. Garnish with sprigs of rosemary and serve. Again, if you need a non-alcoholic drink, add a splash of cranberry juice in place of Chambord.
  4. Enjoy!

SERVING SUGGESTIONS

Wondering what to munch on while enjoying these Christmas cocktails? Here are some of my favorite snacks to serve with cranberry mimosas.

VARIATION IDEAS

There are plenty of ways to change up this recipe and try something new! You can make it more classic or crank up the holiday cheer even more.

  • Traditional: Want to simplify this drink? A traditional mimosa is made with about two cups of orange juice and a bottle of Prosecco or champagne. You can’t go wrong!
  • Pomegranate: You can focus more on the pomegranate flavor by combining a bottle of Prosecco with two cups of pomegranate juice. Pour over the diced apples and pomegranate seeds, and serve.
  • Poinsettia: Another popular mimosa spinoff, this one even sounds Christmassy! Combine equal parts cranberry juice and Prosecco, and add a splash of orange liqueur to each serving. I like to garnish this one with fresh oranges or tangerines cut into small wedges, and fresh cranberries.

CAN I MAKE THESE HOLIDAY COCKTAILS AHEAD?

  • You can definitely prepare most of the mimosa ahead of time by washing and preparing the fruit, setting out the glasses and rosemary sprigs, and chilling the wine.
  • However, you shouldn’t open and pour the Prosecco until you’re ready to serve, or it will start to go flat.
  • Also, keep in mind that cut apples tend to turn brown quickly, so to avoid that, you may want to keep them in a bowl of water and lemon juice. Drain just before using.

CAN CHRISTMAS MIMOSAS BE MADE WITHOUT ALCOHOL?

  • Yes! You can use a non-alcoholic sparkling wine in place of the Prosecco, and proceed with the rest of the recipe. It’s a great way to have a super-festive Christmas cocktail that everyone can enjoy!
